At the age of 14 Brian began his first job in a local restaurant as a dishwasher, where it was not long until he worked his way through the rankings to his first management position. Brian continued to work in the industry until it was time for college, where he majored in forestry and wildlife management. Far from where he had started and where he would come to be, he began writing his first business plan and menu at the age of 20.

In the late 90′s Brian met Kevin Blair, a then young General Manager at a Jillians Entertainment. Heading home from a General Managers Conference one evening the men began contemplating their dream of owning their own restaurant. Properties were then looked at and concepts thought up, but unfortunately, for the young entrepreneurs nothing panned out.
